Super Snack

Have I mentioned that I cannot do anything in the kitchen without Peter's help?

This may be his favorite thing to make. Peanut Butter Balls. I love these because they provide a yummy way to sneak quite a bit of Flaxseed Meal (easier to digest than whole flaxseed) in to my kids diet. I also add Flaxseed Meal to their smoothies.

Here's Peter showing you the ingredients... Peanut Butter Balls

  • Organic Peanut Butter (about 1/2 cup)
  • Flaxseed Meal (about 2 Tablespoons or more)
  • Raw Honey (as sweet as you like)
  • Toasted Wheat Germ (in a separate bowl - to coat the outside so they don't stick together)

I don't measure anything... so, I'm guessing here. Just mix the PB, Flaxseed Meal, and Raw Honey. Form balls. Coat in wheat germ. Keep in the fridge.

Sometimes I hide one chocolate chip (365-Whole Foods brand) in the middle of each ball. Because I'm always trying to incorporate more chocolate in to my diet. : )

Peter's so proud. Much more fun than playdough...

  1. We eat those too! The only difference in our recipe is powdered milk. My kids LOVE them and always have, I do too!

    Thanks for sharing this recipe, Jennifer-- like you, I'm always trying to find ways to sneak a little extra goodness into our snacks. This one looks like a perfect choice. I guess we'll have to squeeze in a trip to Whole Foods tomorrow~

  3. One quick question for you (before I head out on my shopping venture :)... why RAW honey?? I've always purchased the Sue Bee variety, and truth be told, never realized there was anything different...

    And... if you have any more deliciously yummy (and healthy!) recipes to pass along in the future, this reader would love more ideas!

    Raw honey is full of beneficial nutrients and enzymes that are lost in the high heat processing/filtering that produces the pretty honey bear variety. Historically, raw honey has been used to treat for all sorts of ailments... try googling "benefits of raw honey" and see where it leads you.
